What is better food, better health?

Am I a paleo blogger? No. Do I believe health starts with nutrition? Absolutely. If you're looking for a manifesto on clean eating and arguments in favor of a paleo lifestyle, you won't find it here. Check out The Whole9. In fact even if you're not looking for something radical check that site out anyway. It's a great starting point. It's got links and articles and a whole bunch of science - data - about nutrition and how our bodies use macronutrients. I'm not a licensed expert but I listen to experts who back up their claims with real compelling data. And I've tried a few different things to "eat healthier" over the years - Weight Watchers, Zone, starvation (that was a brilliant one) to name a few. Nothing has been better for me and yielded better results than eating low glycemic with a paleo foundation (it's actually similar to Zone too, but with less precision). I have a busy schedule, a two year old, a husband, a full time job, I work out and I have a closet for a kitchen. I figure there must be a few people out there who can relate to some of that. I used to think eating healthy and making time for regular meaningful exercise was "hard." It really just takes some guidance, awareness, and enthusiasm. So here's a start - here's what I cook and eat (and sometimes what I read).

Slow Cooker BBQ Pulled Pork

I am a huge fan of slow cooked meats that are so tender they fall apart just from you looking at them. Well, I've been told I have a withering stare but I like to think that's not why this pork falls apart on contact. It's just so good. The dry mustard is essential in this recipe and you can use smoked paprika instead of regular paprika. It's also best if the ground black pepper is freshly ground peppercorns.

Ingredients:
1 Tbsp garlic powder
1 Tbsp salt
1 Tbsp onion powder
1 Tbsp paprika
1 Tbsp chili powder
1 Tbsp dry mustard
1 tsp ground black pepper
1/4 tsp cinnamon
2 lb pork roast
1/3 C smokey BBQ sauce
1/4 C water

Supplies:
Saran Wrap
Slow cooker*
Small bowl
Tongs

Serves: 4-6

*All of my slow cooker recipes could be made in a covered pot on the stovetop or in a Dutch oven.

Combine all dry ingredients and mix well. Rub onto roast on all sides, wrap tightly in Saran Wrap, and refrigerate overnight. In the morning, place in slow cooker, set temperature to low for 7 hours. After 7 hours, mix BBQ sauce and water in bowl then add to the roast. Set temperature to high for 1 hour, then begin to pull pork apart. It should pull apart easily. Leave in slow cooker on simmer for one to two more hours.

We used the pork to make pulled pork tacos by making Paleo Tortillas. You could also just eat it as is with veggies. Tomorrow I'll be using some leftovers in an omelette. If you're strictly paleo or on Whole30 you may have trouble finding a BBQ sauce that is compliant and if you do you will want to make sure the spices and pork are organic.
